Copycat Perfect Bars Recipe

I love a good protein bar, but they’re often loaded with junk and are super expensive. Perfect Bars are one of my favorites, so I use this recipe to make them in bulk at home. I like to individually wrap them in wax paper after cutting them up so they’re ready to throw in lunches or grab for a snack.

PREP: 10 minutes

COOL: 1 hr

MAKES: about 8 square bars

Ingredients

  • 1 1/4 cups sprouted oat flour (I make my own - just blend uncooked sprouted oats)

  • 1/4 cup vanilla protein powder (I like this one)

  • 1/4 tsp salt

  • 1/2 cup natural peanut butter

  • 1/3 cup real maple syrup

  • 1 tsp vanilla extract

  • 1 tbsp melted coconut oil

  • 1/2 cup mini dark chocolate chips

Directions

  1. In a large bowl mix together oat flour, protein powder and salt. It’s important that the oat flour be the sprouted variety so that you don’t have a hard time digesting it. You may not be able to find sprouted oat flour at the store, but you can just make your own by putting uncooked sprouted oats in a blender until they are smooth.

  2. Add peanut butter, maple syrup, vanilla, and 1 tbsp coconut oil. Mix well (I use my hands for best results). The mix should feel the consistency of playdough - if it’s too dry, add a one more tbsp coconut oil. You want the mix to be firm - too much coconut oil will make them too soft so be mindful of that.

  3. Mix in chocolate chips.

  4. Press into a parchment-lined bread pan (4in x 8in) or an 8in x 8 in pan if you’re doubling the recipe.

  5. Add more chocolate chips on top and press flat.

  6. Let sit in the refrigerator for 1 hour and then cut into squares. Keep refrigerated.
